Floating Sidewalks, Tortoises, Court Cases & Traffic Jams

Site Approval Permit....Site Approval Permit... who would have know those words would have been so hard to achieve! Who knew it would be almost a year later I held that letter in my hand to get notarized. Who knew we would pivot, and twist, and alter and pivot again to get to this day?

We knew it was going to be a process, we knew "Pasco," and ultimately our souls did KNOW it was going to be a journey of endurance. But truthfully, I'm not sure we knew what we were going to have to make it through. Through the ridiculous requests to pay and build a non connecting sidewalk, through the taking of 10 feet of our land, through survey after survey, and email chains longer than all our menus combined, and timelines after timelines being shattered, we made it through.

Because ultimately, endurance we had, and because we had a VISION, and I'll be damned if we were going to let it go.

We were, and always will be here with a vision for community, with a yearning to gather people around tables and experience nights that will speak to us for years to come. To taste test and savor the best flavors around. To meet and learn from the people around us. To build, and rebuild what our community desires.

Our story is our story, and we know now more than ever what it takes to start a small business from the ground up. We have an appreciation deeper than we could have imagined for all the small businesses in this grind, living out their passions through the good, and through the challenges. We're digging our heels in the ground for the long run, and we look to forever grow with you Land O Lakes!

WHAT'S NEXT?

We would like to do our best to document our real life timeline from here forward, so our community can come along with us. For those who have been to visit you will know we have done what we can to create a space to showcase our products and to get to know our community. NOW, the real stuff starts.

We are currently awaiting a pre construction site visit which will allow us the go ahead to put shovels in the ground. From there, we will await timelines with our contractor to renovate the building on site, dig the required detention pond, lay our sidewalks and parking lot, and build our adult and children's playground. We SHOULD have actual dated timelines by late next week.

We learn things from our customers every day and truly love serving in this smaller capacity while we work our way to venue opening.
